DON'T LOOK!

 

Now I put the hook blade into the cut, under the skin.  I grab the leg above the hock and firmly pull the blade downward - down the leg and towards the middle of the stomach area.  You will do the same thing on the other leg and make the two downward cuts meet in the middle of the stomach.

Once I have the cut done I gently pull the skin away from the meat and muscles.

Grabbing hold of the top of the back leg I pull the skin down, away from the legs.

Repeat these steps on the other leg.
