How much you have to cut up the rabbit will depend on the size of the rabbit and the size of your dogs.  My German Shepherd could eat half a rabbit as one meal but my Chinese Cresteds need much smaller pieces.

I use a big cleaver and the shears to cut up the rabbit:

Laying the rabbit out on my cutting board I first whack the carcass into three sections - the rear end with the legs, the mid-section and the top section with the front legs.  I then cut the rear legs in two and cut the front legs from the top section.  The rabbit is now ready to be bagged and frozen.
